For us it will always be a pleasure to be hosted by Carlos Marques, an experienced culinary master with a deep-rooted passion for Peruvian cuisine. Marques and his team know better than anyone how to translate the versatility and richness of the Peruvian culinary tradition to the plates of their guests. Callao Cevicheria's menu is a celebration of this tradition, with an impressive selection of dishes that range from classic to innovative, effortlessly integrating influences from Japanese and Spanish cuisine.

In addition to the Ojo de Bife, one of the dishes that should not be missed is the 'Lomo Saltado', an iconic Peruvian dish consisting of tender marinated beef, stir-fried with vegetables and served with crispy fries and rice. For seafood lovers, the 'Ceviche Mixto' is a true taste sensation. This dish combines freshly marinated fish, shrimp and squid with lime juice, sweet potato and corn, resulting in a perfect balance between freshness and savory.
